It's ironic that after we've picked our plumpest tomatoes we leave them to dry under a blazing Italian sun until they're dry, sweet, and a shadow of their former selves. Only then are they fit to grace our smooth, sun-dried tomato paste.
Rich, red and concentrated, you can give tomato puree the elbow and use this paste in pasta sauces, stews, casseroles and soups, not forgetting fish, meat or vegetables before grilling.
It's also glorious just spread on toasted bread.
